Ginger & Date Muffins Recipe

Assalamu Alaikum everyone!
It's Hanifah here. I recently tweaked an old muffin recipe of ours and this is what I came up with. I hope you like it as much as we do!

Ingredients:-
(Dry ingredients):
1 1/2 cups plain flour
3/4 cups granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon powder
1 1/2 tsp. ginger powder
(Wet ingredients):
1/3 cup vegetable oil
1/2 cup milk
1 large egg
1 tsp. vanilla extract
(Fruit):
1 cup medjool dates

Sieve the dry ingredients and mix them together in a large mixing bowl.
Then whisk together the wet ingredients in a jug until blended.
Pour the wet ingredients onto the dry ingredients and mix until combined.
It should form a rather thick and stiff batter.
Wash and de-stone the dates. You will need a cupful - I used 10 large medjool dates.
Chop them up into small chunks and add them to the batter.
Mix together.
Preheat the oven to 200 degrees Celsius, 400 degrees Fahrenheit, Gas Mark 6 and line two muffin trays with paper cases.
Fill the cases halfway and bake for 15-20 minutes until golden-brown.
When a toothpick is inserted it should come out clean. This recipe should make 14 muffins.
Place the muffins on a wire rack to cool a little.
They are best served warm with a cup of tea.
