Maryam here this week. This recipe is a huge family favourite and one I've been baking since I was 11 years old. So let's begin!
Ingredients:
2 large ripe bananas
1/3 cup yogurt
1 1/2 tsp vanilla extract
2 large eggs
1 cup granulated sugar
2 cups plain flour
3/4 tsp baking powder
1 tsp baking soda
1/2 teas salt
1/2 teas cinnamon powder (optional)
10 tbls unsalted butter, softened to room temperature
Method:
In the bowl of your food processer, blend the bananas, yogurt and vanilla extract until smooth. Then add the eggs and blend them until combined.
In another large bowl, mix together the dry ingredients: sugar, flour, baking powder, baking soda, salt and cinnamon.
Then add the softened butter. (If you are using salted butter, then leave out the 1/2 tsp of salt)
Line some cupcake trays with cases and scoop the mixture into them about half way.
Bake for 22 - 25 minutes at 350 degrees Fahrenheit, or until a toothpick inserted into the centre of a cupcake comes out clean.
Serve and enjoy!

Me too. (except we never have a need for a blender so we don't have one) Oh and the granulated sugar looks a little brown. Are you using demerara sugar?

DeleteActually both! Some is Fine Granulated and the other is Demerara. I used both because we ran out of the first.
