Maryam here this week. This recipe is a huge family favourite and one I've been baking since I was 11 years old. So let's begin!
Ingredients:
2 large ripe bananas
1/3 cup yogurt
1 1/2 tsp vanilla extract
2 large eggs
1 cup granulated sugar
2 cups plain flour
3/4 tsp baking powder
1 tsp baking soda
1/2 teas salt
1/2 teas cinnamon powder (optional)
10 tbls unsalted butter, softened to room temperature
Method:
In the bowl of your food processer, blend the bananas, yogurt and vanilla extract until smooth. Then add the softened butter. (If you are using salted butter, then leave out the 1/2 tsp of salt)
Line some cupcake trays with cases and scoop the mixture into them about half way.
Bake for 22 - 25 minutes at 350 degrees Fahrenheit, or until a toothpick inserted into the centre of a cupcake comes out clean.

Me too. (except we never have a need for a blender so we don't have one) Oh and the granulated sugar looks a little brown. Are you using demerara sugar?

DeleteActually both! Some is Fine Granulated and the other is Demerara. I used both because we ran out of the first.
