Assalamu Alaikum everyone!
Today we will be showing you how to make this traditional Emirati dessert. We absolutely love Liqeemat and Ramadan is almost incomplete without it! This is a fairly easy recipe so let's begin.
Ingredients:-
4 cups plain flour
4 tbsp. sugar
1 tsp. instant yeast
1 tsp. cardamom powder
1 generous pinch of saffron
2 to 2½ cups warm water
2 tbsp. rosewater
Date syrup (dibs)
Sesame seeds (optional)
Next add the warm water and the rosewater and mix the batter until there are no lumps. The batter should be very thick (thicker than pancake batter).
Cover with a lid and set aside for at least 2 hours.
The batter should double in size and look like this.
Fill a large or medium-sized wok with oil (we used coconut oil). Heat up the oil and then reduce the heat to medium. Using two spoons, scrape off the dough into the oil forming small balls. Don't let them brown too quickly and constantly turn them so they brown evenly.
Remove with a slotted spoon, drizzle with date syrup and coat with sesame seeds.
Serve warm and enjoy!
We hope you liked the recipe and that you give it a try. See you next Friday, insha'Allah.
Wassalam,
