Assalamu Alaikum everyone!
It's Hanifah here again this week! This time I wanted to do a recipe post as I haven't done one in a while. These brownies are so easy to whip up and taste really good too, masha'Allah. They are also vegan, nut-free, grain-free and sugar-free!
Ingredients:-
1 cup pitted Medjool dates
3/4 cup cacao powder
1 cup tahini
1/3 cup plant milk (I used Macadamia milk)
1 flax egg (1 tbsp. flaxseed powder + 3 tbsp. water)
1 tsp. vanilla extract
1/2 tbsp. baking powder
1/2 tsp. salt
1 cup dark chocolate chunks
1. First you will need to make your flax egg. Combine 1 tablespoon of flaxseed powder with 3 tablespoons of water. Stir and set aside for 5 minutes to thicken.
2. In the meantime, grease(I used rapeseed oil) a 9x9 inch baking pan and preheat your oven to 177 degrees Celsius, 350 degrees Fahrenheit, Gas Mark 4.
3. To make the brownie mix, simply place all your ingredients(except for the chocolate chunks) into a food processor.
4. Then blend on a high speed for around 1 minute until the batter is thick and smooth.
5. Next, add the chocolate chunks and pulse until they are somewhat evenly distributed.
5. Spread the brownie batter evenly into the baking pan using a spatula.
6. Bake for 15 minutes, then allow to cool completely before slicing.
These will keep for up to 3 days at room temperature and you can also freeze them if you like.
