Carrot Cake with Maple Butter Frosting Recipe

Assalamu Alaikum everyone!
Maryam here, and todays recipe is this filling moist carrot cake with a yummy maple butter frosting.  So let's jump right in!

Ingredients:
1 pound carrots, peeled
1 1/2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon powder
4 eggs
2 tsp. vanilla extract
1 cup soft dark brown sugar
1/2 cup granulated sugar
1 1/4 cups sunflower oil
1/2 raisins

Maple butter Frosting:
6 tbsp. butter, at room temperature
3 cups icing sugar
1/4 cup maple syrup

Method:
1. Preheat oven to 350 degrees Fahrenheit. Grease and line an 11x8 - inch rectangular cake pan. I used a glass Pyrex dish.
2. Grate the carrots and set aside.
3. In a bowl, sift the flour, baking powder, baking soda, salt and cinnamon. Set aside.
4. With an electric mixer, beat the eggs until blended.
5. Add the vanilla, sugars and oil; beat to incorporate.
6. Add the dry ingredients in three batches, beating well after each addition.
7. Add the carrots and raisins and fold in thoroughly.
(If you like nuts you can add 1 cup of chopped walnuts to the mixture)
8. Pour the batter into the prepared pan and bake until the cake springs back when touched lightly, 40 - 45 minutes. Cool for 10 minutes in the pan, then unmould and transfer to a wire rack to cool completely.
9. Mean while make the frosting. Cream the butter, icing sugar and maple syrup until blended.
10. Spread the frosting over the top of the cake.
Cut into squares. Serve and enjoy!

Our Old Blog

Assalamu Alaikum everyone.
We have a couple of things to tell you in today's post. The first is about our old blog which we started in 2011 and ended in the autumn of 2017. We thought you may be interested in seeing some old projects we did when we first started blogging.
We then moved on to this blog as we got older to begin afresh and try being more consistent with our posting. Alhamdulillah, we have achieved that so far!
Now on to the second thing we want to address and we feel it is rather sad news, unfortunately. We will, insha'Allah, be leaving our blog in September. We are not sure how long we will be gone; it may be forever or we may return but no longer be posting regularly. This is because we are all very busy nowadays and don't want our blog to become a burden instead of a hobby! Insha'Allah, we hope you understand.

Today, we have chosen a few of our favourite projects from our old blog to share in this post. Without further ado, here is the first craft:

This was our first craft on our old blog and was made by Maryam.
We went through a phase of playing with these miniature dolls and made them this boutique. We called it Zainab's Boutique because we made Zainab's doll the shop owner.
We also made the dolls a car out of small cereal boxes.
This was arguably our most popular post on our old blog, masha'Allah. It was a project Hanifah did for school, back when we weren't home-schooled, and masha'Allah is still impressive to this day!

This was probably our biggest project. It was an Eid gift from us all to Sumayyah when she was around 5 years old. SubhanAllah! Looking back on it now, we are amazed at the amount of detail we put into the house to make it feel like a real lived-in home!
Well that is all for this post.
We have really enjoyed blogging consistently and we would like to end on a high. So! Insha'Allah, we will be posting on Tuesdays and Fridays until September 4th.
